Pitar 

Pitar - also known as pitarnik - is a traditional recipe of pomak cuisine. It is used as a substitute for olive oil by the poor inhabitants of Pomakochoria.  It is made from fat which is removed from the belly of a goat or calf and then boiled in large cauldrons. Once well melted, it is kept in large containers where it coagulates. Pieces of pitar are stored and preserved for a long time.
