Gaigana 

Gaigana is a traditional delicacy of the Pomak cuisine. It is made of potatoes, onion, and garlic baked in the oven with olive oil and cornflour. It is typically served for breakfast.

It should not be confused with gaigana, the traditional omelet from Florina, made of beaten eggs mixed with tomato and cooked in the oven.
