Kazandipi is a kind of smoky pudding with an inverted burnt caramelized bottom crust. It is prepared with buffalo milk flavored with rose water and mastiha (mastic). Its roots being lost back in time in Turkey and Constantinople (Istanbul), kazandipi is very popular in Northern Macedonia and Thrace and especially in the city of Xanthi.
The dessert is named after the burnt bottom of the pan (kettle) that gives it the texture and taste. According to the legend, the Sultan of the Ottoman Empire asked his confectioner to make him a pudding. After burning the buffalo milk by accident, the confectioner named the dessert kazandipi.
