Steamed vatos is a specialty of Thracian cuisine and a very popular dish. The fish is steamed with vegetables (peppers, carrots), and garnished with parsley. It is served in restaurants and taverns on the beaches of Xanthi, Porto Lagos, Fanari, Agios Charalambos in the area of Maronia, Makri, and Alexandroupolis.
