Sweet memories from the past

Although tavouk gogsu is a sweet originating from Turkey and Constantinople (Istanbul), it is also very popular in Eastern Macedonia and Thrace. It is the only dessert made from chicken. It is actually a milk pudding with a chewy texture, made with milk, chicken breast, rice flour, potato flour, sugar, and flavored with vanilla. The cream is poured into a large rectangular pan, and after it cools well, it is shaped for presentation with a spatula and served wrapped and sprinkled with cinnamon.
