Lamb in the oven

Korbanoudi is a traditional dish prepared with goat or lamb baked in the oven with onions, chopped fresh onions, mint, spinach, and a liver chopped, scalded, and well sautéed. It is wrapped in caul fat and served with slices of bread. The dish is a popular specialty of Evros area.
