Perek 

The easy fried pie

Perek is a traditional pie in Thrace. It is a homemade filo pastry sheet with cheese and spinach filling, folded and topped with another filo sheet. Perek is fried in a big pan rather than baked in the oven. It is fried on both sides until slightly browned. It is a dish of Pontian origin.
