Kiskeki is a traditional dish of Thracian cuisine. It is meat and couscous or wheat boiled together for many hours in a large cauldron. Variations are found in various parts of Greece. Usually, kiskeki is prepared on the eve of a major Christian holiday or feast and then served to all attendees during the feast.
The famous kiskeki of Evros (evritiko kiskeki) is prepared with pork, couscous, hot peppers, and onions boiled in a large, clay pot. It is served with strained yogurt.
