Giofkades: so flavorsome that can be enjoyed plain!
Giofkades - also known as gioufkades or joufkadis - is a type of traditional Greek pasta strongly resembling Italian pappardelle. The pasta is typically made with (semolina) flour, milk, eggs, and a bit of salt. The dough is formed into sheets, which are then cut into strips, and left under the sun until dry.
Gioufkades are typically cooked in a sauce or barely covered, and are served in their reduced cooking water.
Lamb with gioufkades is a delicious Thracian dish.
