A typical dish of the Thracian culinary tradition. It is a chicken stew served with crepes, traditionally known as lalagites or lagites. Lalagites typically consist of a kind of porridge made of flour mixed with water and baked on a hot stone. When cool, they are placed in a baking tray one next to the other.
In the meantime, the chicken is cut into large pieces and seasoned with ground- and hot pepper, then cooked in a pot with onions, homemade tomato sauce, or chopped tomatoes. When ready, shred the pieces of chicken and place them into the baking tray on top of the lalagites (crepes); cover with their sauce and simmer over low heat until ready.
