Bambo 

Bambo is a traditional dish, typical of the Christmas table in Thrace. It is named after "babo", that is, grand mother. Pork intestines are filled with minced or thinly chopped meat, pieces of liver, sliced leeks, bulgur (groats), and various spices. It was traditionally cooked in clay pots or wide casseroles.
