The mullet (lat. Mugil cephalus) is a fish species that is widespread in coastal tropical and subtropical waters worldwide. However, it is of importance to the Mediterranean cultures. In Greek, depending on their age and the dialect of the area, mullets are known by different names. Mullets in Abdera and Porto Lagos areas have been known since antiquity.
The salty, smoked mullet, the well-known licorice, is an excellent delicacy of the Vistonida area, whereas bottarga is made chiefly from the roe pouch of grey mullet.
