Gouna mackerel: the ultimate meze!
Crispy on the outside and with juicy flesh on the inside, Gouna mackerel is a popular dish in many areas in Eastern Macedonia and Thrace, such as Kavala and the island of Thassos. After being filleted, the fish is washed well with seawater and then left in the open air until it dries completely under the hot sun.
The technique of preparing Gouna, that is, sun-dried fish, was invented by fishermen in view of preserving fish in times when electric appliances such as refrigerators were non-existent. A variety of fish can be sun-dried and cooked as Gouna, that is, sun-dried fish, however, mackerel really stands out.
