Armia pork is a traditional dish that is typical of the cuisine of the Eastern Macedonia and Thrace region. Its origins are traced back in time and to the area of Eastern Rumelia. Traditionally, the pork is cooked with homemade pickled lettuce, butter, and red pepper and roasted for many hours in a clay pot. In the past, it was a dish of the traditional Christmas dinner.
