The sweet, anise-flavored aperitif from Asia Minor
Ouzo is widespread throughout Greece. However, in Thrace, ouzo is made from water, anise, coriander, and fennel seeds that are combined and distilled together. The product of the first distillation is then distilled again and then separated into three parts. The middle part of the second process is then used for the final product. This recipe is due to the refugees of Asia Minor and is transmitted from generation to generation. As a result, ouzo from Thrace is distinguished for its mild taste and the intense aroma of asteroid anise.
