The mastic halva
Halva is a traditional delicacy that is widespread in many Mediterranean and Balkan countries as well as in the Middle East. The name is used for referring to a huge variety of confections in these areas. Drama is particularly famous for its mastic-textured halva with origins from Cappadocia. Made primarily of tahini and caramel, halva from Drama has a unique taste, a distinctive texture, and high nutritional value; other ingredients and flavorings, such as vanilla, cocoa, almonds, or other nuts and fruits are often added to the basic tahini and sugar base.
The preparation of hand-made halva in workshops in Drama is spectacular. The dough is kneaded in a large bowl, first with fingers and wrists followed by kneading with the elbows; the finale is striking: the dough is transferred to a marble surface and then a rhythmic rocking begins, to ensure that the texture of the halva becomes even more delicate and chewy.
