The wisdom of tradition in a beverage
The savory ayran is a traditional beverage typical in Eastern Macedonia and Thrace. The main ingredients are fresh milk (or water), yogurt, and salt. Most commonly, ayran is made of cow's or sheep's milk, whereas goat's or camel's milk is sometimes used. Occasionally, spearmint is also added. It is a healthy beverage, rich in nutrients and low in fat.
With Turkish origins, ayran has become widely known in areas of Greece with large populations of Greeks of Turkish descent. It is especially popular in the Greek regions of Evros. It is also popular across Western and Central Asia and Eastern and Southeastern Europe (Bulgaria, Turkey, Iran). It is served chilled and often as an accompaniment to grilled meat or rice.
