Lamb in the wood fire oven
Kapamas is a meat specialty that usually consists of lamb with rice cooked in the hull. The meat is sliced into portions and is typically flavored with the addition of onions, fresh onions, dill, parsley, lettuce, and tomatoes. Typically, the food is cooked into a traditional wood fire oven, usually from Holy Saturday evening until Easter Sunday.
Sometimes, kapamas may also be prepared with kid goat instead of lamb.
