Bourani is a pie typically made with wild greens and herbs. In its traditional version, the filling is a mixture of spring onions, wild cabbage, poppy, wild beans, nettles, fresh oregano, mint, parsley, spinach, wild radish, fennel, and dill, spiced with red and black pepper, salt, dried mint, parsley, and oregano, in a sauce of grated tomato. It is wrapped in handmade phyllo.
