Gourgi 

Gourgi is a traditional paximadi (Greek: παξιμάδι), that is, a type of rusk, made from chikpea flour. It is a signature delicacy of the island of Samothraki. It typically takes 33 hours to prepare the gourgi, yet the process followed ensures that the resulting rusk can safely be stored for a year without the need of adding preservatives.
